| SUMMARY: Under immediate supervision, performs high volume food preparation of average difficulty at a correctional or youth facility in leading inmates or students in food preparation; and performs related work as required. DISTINGUISHING FEATURES: This is the entry working level class in the Food Service Steward sub-series. An employee in this class performs food preparation duties on a fixed or other shift and leads inmates or students in similar duties. This class differs from Food Service Steward 2 in that an incumbent of the latter supervises employees in this class. |

| Examples of Duties and Responsibilities: | ||
| 1. Directs inmates or students in all phases of food preparation such as cleaning the kitchen and equipment, cooking and baking volume meals, and receiving and storing supplies. 2. Is responsible for the preparation of special diets and for the serving of all meals on time. 3. Maintains security; keeps serving line stocked; inspects prepared food; keeps food properly stored. 4. Observes and teaches inmates or students the rules of personal hygiene, sanitation, and safety; schedules work assignments of inmates or students. 5. Operates a variety of kitchen appliances such as meat slicer, food chopper, dishwasher, mixer, grill, and fryer. 6. Assists with menu preparation, the ordering of supplies, and work procedure development. 7. May take inventory and help keep records. 8. May evaluate inmates' or students' performance. |

| Minimum Qualifications: | ||
| Education and Experience: Experience equivalent to three years of full-time volume food preparation and service work including at least one year of supervisory or lead experience. | ||
