The County of San Mateo Health System's Division of Correctional Health is seeking candidates for a pool of on-call (extra-help) Cooks I/II to prepare and serve food at the correctional facilities for youth or adults. The pool of final candidates will be on call to provide temporary, short-term coverage as needed.

Some of the responsibilities include preparing and serving a variety of dishes in large quantities; checking portioning and garnishing of food, and ensuring that it is served correctly and according to instructions; operating and cleaning a variety of kitchen equipment; calculating ingredients needed; receiving and storing food; training new cooks; assisting with menu planning and recipe development; cleaning the kitchen and dining room; and delivering food to other locations. 

Cooks assigned to the County's youth and adult correctional facilities are responsible for food preparation and supervision of inmate helpers. Appointment may be made at either the Cook I or II level, depending on the qualifications of the successful candidate and the needs of the department. Cook IIs may share shift responsibility and supervision of kitchen staff.

NOTE: The positions are on-call/extra-help. Extra-help positions offer temporary employment for 1040 hours which is equivalent to about six months of full-time work, however, employment might end sooner depending on the needs of the hiring departments. Extra-help positions are paid on an hourly rate basis and do not provide employee benefits. Extra-help workers are not guaranteed permanent status at the end of the extra-help assignment.
Physical Requirement: Must be physically able to lift, carry or push materials, supplies or equipment weighing up to 50 pounds; and walk or stand for long periods of time.

Licensure/Certification: Food Safety Certification is strongly preferred. Depending on the location assigned, possession of a valid and current driver license may be required.

Education and Experience:
Any combination of education and experience that would likely provide the required knowledge, skills and abilities is qualifying. A typical way to qualify is:

Cook I:
Two years of experience in a large commercial or institutional kitchen which has included preparing and serving food and cleaning kitchen equipment and facilities. 
Cook II: Two years of experience as a kitchen worker, including one year as a journey level cook, preparing and serving food in a large commercial or institutional kitchen.

Knowledge of:
  • Volume food production techniques.
  • Methods and equipment used in production of large quantities of food.
  • Kitchen cleaning and sanitation methods.
  • Basic arithmetic.
  • Lift, carry or push materials, supplies or equipment weighing up to 50 pounds.
  • Walk or stand for long periods of time.
Skill/Ability to:
  • Preparing and serving large quantities of food.
  • Reading and accurately following recipes and menus.
  • Working rapidly under pressure.
  • Working cooperatively with others.
  • Directing the work of assistants.

Other Requirements: Positions working in a correctional facility require that the applicant obtain and maintain a security clearance as a condition of employment. Majority of positions require that employees work weekends, holidays, evenings or other shifts and be on-call.
